Based in the Burren, a limestone landscape on the west coast of Ireland near Kilfenora in County Clare, Anam was built on a long personal obsession with coffee. The founder had been making coffee for teachers at primary school, and traces the decisive moment to tasting an Ethiopian heirloom on a V60 pour-over in Melbourne in 2014.

From there came formal training at the London School of Coffee under a chemist from the University of Copenhagen, barista work with Jeremy Challender at Prufrock in London, and an Intermediate Diploma in Barista Skills from the SCAE in Italy. He also studied sensory evaluation.

The roastery operates from an old farmhouse near Kilcorney and the approach is small-batch, hand-roasted. Coffees come from Colombia, Ethiopia, and Peru.
