The Orkney Roastery

The Orkney Roastery is based in Orkney, Scotland, founded in 2016 by Euan and Sara after years of planning and extensive cupping during the build-out phase. The roaster, named Mystaria, has a maximum capacity of 10kg of green beans.

Following the unexpected death of co-founder Euan, head roaster Roger has taken over day-to-day operations, continuing the roastery's original approach and range. The business roasts daily and dispatches orders on Tuesdays and Thursdays.

The entire operation, from roasting to packing, runs through Roger alone, keeping the batch sizes genuinely small. Coffees are sold under the Aria range, with names taken from musical genres and instruments.
