Good Times Roastery is a solo operation run by Simon from Guernsey, who has been roasting coffee since 2017 after leaving a sales career and discovering the trade at a local roastery. The business launched commercially during the 2020 lockdowns, with online sales fulfilled through a SumUp storefront.

Simon roasts on a 1kg electric roaster, aiming for light to medium profiles that bring out natural sweetness while staying true to each coffee's origin character. Sourcing is described as direct trade, with the stated intent that money flows back to farmers, their families and their education.

Eco-friendly packaging is part of the sustainability message, although no certifications such as organic, Fairtrade or B Corp are claimed. Coffees are sold by origin alongside blends, and decaf is offered through the SumUp store.
