Jackalope Joe Coffee Co is a one-person micro-roastery in Spalding, Lincolnshire, run by founder Hannah from home around part-time work and raising two young boys. She started the business after struggling to find fresh speciality coffee locally, and now roasts every Tuesday, asking customers to factor that schedule into their orders.

The focus is on single origin speciality coffee, sourced through a mix of direct trade and intermediaries with traceable, sustainable supply chains. Hannah roasts artisan style, using sight and smell to judge when each batch is ready.

Coffee ships in compostable, resealable bags with biodegradable labels. Subscriptions run at three tiers, including a dedicated decaf option, with monthly delivery and free UK mainland shipping.

There is no cafe, no training offer and the operation is online only, with click and collect through a small set of local stockists.
