The Milk Shed is a specialty coffee roastery and cafe bar in Brighton, working from a building that was originally a dairy supplying the Royal Pavilion in the early 1800s. Customers in the cafe can watch coffee being roasted, packed and dispatched.

Beans are sourced through Raw Material, a social enterprise that returns 100 percent of its profit to producers, with origins including Mexico, Colombia, Brazil and Nicaragua. Roast profiles are developed using profiling software and checked batch by batch for consistency.

The team are members of 1 percent for the Planet, donating 1 percent of all sales to environmental causes. Packaging is supplied by Dutch Coffee Pack, certified CO2 neutral and aluminium free.

Espresso is pulled on La Marzocco machines. They run in-person home barista courses at the roastery and were named Sustainability Champion by Restaurants Brighton in 2026.

The cafe runs Monday to Friday, 7:30am to 3pm.
