Microroastery was started by Nick and Erika, who began roasting in a garden shed in 2011 with a 2kg machine before opening a coffee shop in Canterbury in 2013. The couple had met abroad and rooted in the UK, initially trading from Whitstable seafront before moving into the city centre.

The roastery has since moved to Aylesham, just outside Canterbury, and upgraded to a 5kg roaster, while the coffee shop continues to operate on Margaret Street in the city centre. The business has retained a visible link to its origins: the original small roaster is still on display upstairs in the shop, and the Canterbury café sells freshly roasted coffee from the Aylesham site.

The setup of a dedicated roasting facility separate from the retail space is a practical evolution for a business that outgrew its original model.
