Cairngorm Coffee was founded by Robi Lambie in 2014 around a kitchen table in Newtonmore, and now roasts from a dedicated site in Edinburgh's Portobello area, opened in 2023. The team operates an Edinburgh cafe at 1 Melville Place (since 2016), a Highland cafe and General Store at Ralia on the A9 near Newtonmore, and an espresso cart for events.

The roastery itself is open by appointment only. Cairngorm trades on a clear identity around Scottish coffee culture and publishes its own print magazine, Underdog.

Producer relationships are named on the site and include Benjamin Paz (Honduras), the Salazar family and Wilder Lazo (Colombia), with green coffee currently sourced from Colombia, Honduras, Brazil, Ethiopia and Kenya. Wholesale, subscriptions including a dedicated decaf option, and brewing kit sit alongside the cafes.
