FOCCO Coffee Roasters

FOCCO is a speciality roaster in Whitminster, Gloucestershire, founded by Mati Canzani after years working in technology and data. That background shows in the method, with a lot of measuring, testing and refining behind each roast profile, though the site is candid that coffee is also sensory and subjective.

Roasting is done in small batches on an Aillio Bullet. Traceability is treated as baseline rather than marketing, with specific regions, washing stations and cooperatives named on each coffee, and green beans bought through United Kingdom importers.

Pricing is set out in the same plain terms, described as fair rather than carrying a luxury branding premium. The range splits into espresso and filter, and includes a sugar cane processed Colombian decaf from the Caficauca cooperative in Cauca, a group formed in 1961 to give local growers easier market access.

Home barista workshops run at KRATE Village in Whitminster, and there is a separate on site training option where the team come to a cafe and work on its own machine.
