Wilson holds an SCA Diploma, was an SCA Authorised Speciality Trainer from 2018 to 2024, and placed second in the SCA UK Brewers Cup in 2019.
Roasting is done on Stronghold Technology equipment using 100% electric power, with Wilson describing his approach as technology-aided artisan roasting focused on clean, vibrant and well-balanced cups. The sourcing model leans heavily on direct trade with named producers including Patricia Coelho in Brazil, Martin Santos Chavez in Panama and Leon Christianakis in Tanzania, alongside specialist importers such as Raw Material, Caravela, Bossa Coffee Co and Typica.
Over 80% of the annual coffee offer is forward contracted, with the same producers returning year after year. The range covers light and medium roasts across origins including Brazil, Colombia, Tanzania, Panama, Ethiopia and Rwanda, plus an EA sugarcane decaf, sold direct online and to wholesale partners.
