The business name describes its operating principle: no coffee sold through the shop is more than two days post-roast, and customers are encouraged to buy only a week's supply at a time, treating coffee as perishable.

The founders trace their approach to a small Tokyo roastery near Yoyogi Park, where they first saw customers choose from green beans and pick a roast level. They source through specialist importers including Mercanta and Falcon Speciality, paying above Fairtrade prices, and offer around nine coffees spanning Brazil, Indonesia, Ethiopia, Colombia and El Salvador.

The line-up leans dark, with lighter Ethiopian and Colombian options, a seasonal house blend, and an Ethiopian EA decaf.
