Somerset has 4 independent coffee roasters, with Bath the centre of gravity (Gillards since 1888, Colonna under three time UK Barista Champion Maxwell Colonna-Dashwood) and Wellington and Bruton extending out to the rural west. The two Bath operations alone span most of the spectrum: a 137 year old Guildhall Market merchant alongside one of the most research active specialty roasteries in the country.
Bath is the easiest visitor stop. Gillards of Bath sits in the Guildhall Market in the city centre; Colonna runs its operation from Bath as well. Wellington (Brazier Roasters at Fox's Tonedale Mill, a Victorian textile mill) and Bruton (Bean Shot, with a community coffee bar in Sherborne) reward longer routes into rural Somerset.
