Edinburgh has 16 independent coffee roasters, a striking number for a city of its size and a noticeable step up from a decade ago. The roasters here split fairly cleanly into three groups: a small set of long established names, a much larger middle of contemporary specialty operations, and a handful of philosophy led roasters working at the more nerdy end of the spectrum. Stockbridge, Leith, Bruntsfield and the Old Town all carry their own clusters.
Artisan Roast has been roasting in Edinburgh since 2007, making it one of the city's specialty pioneers; the business now runs four cafes, on Broughton Street, Leith Walk, Bruntsfield and Stockbridge. At the heritage end, Edinburgh Tea & Coffee Co traces its origins to Andrew Melrose's tea importing in 1812, and still roasts on a 50 year old Probat drum operated by hand and by eye from purpose built premises on Sir Harry Lauder Road. Uplands Roast is the most unusual: a specialty roastery focused entirely on Vietnamese coffee, with founders sourcing directly from farms in Vietnam since 2017.
Most Edinburgh roasters have their own cafe or roastery space open to the public. The city centre, Leith, Stockbridge and Bruntsfield are the densest clusters and you can comfortably hit three or four in an afternoon. Several also supply cafes and restaurants across Scotland and ship UK wide.
