The geography splits between the Welsh Borders (Hundred House), the Shropshire Hills (Apostle, off grid), Shrewsbury (Aroma), Ironbridge (Iron & Fire) and the rural north (Danielle's in Norbury). The county manages an unusually high concentration of pedigree: a licensed Q Grader runs one of the roasteries, a UK Barista Championship finalist runs another, and a third operates entirely off grid.
Hundred House Coffee roasts speciality coffee from the Welsh Borders under the direction of head roaster Matthew Wade, one of the UK's first licensed Q Graders, who spent the early 2000s helping shape London's emerging speciality scene; the roastery pays farmers before the harvest is complete and guarantees pricing independently of commodity market fluctuations. Apostle Coffee was founded in 2016 by Jon and Charlotte in the Shropshire Hills, where they run an off grid roastery; the entire range is organic, the business was one of the first UK roasters to move to compostable packaging, and the team has since planted over 800 trees and invested in carbon capture and rewilding projects. Danielle's Coffee was set up in 2010 by Danielle, who started her coffee career at Rick Stein's restaurants in Padstow before becoming a two time UK Barista Championship finalist, an SCA authorised trainer, and a UKBC sensory judge.
Shropshire roasters tend toward online and wholesale rather than retail cafes, with notable exceptions in Shrewsbury (Aroma's shop) and Ironbridge (Iron & Fire). The county's lower profile compared to neighbouring regions has not stopped its roasters earning national pedigree.
